Ok so I am heading over to the amazing and beautiful Gorge this weekend for a music festival and well, trying to plan healthy and fulfilling meals and snacks seems harder to do when you are away from home.
Am I right?
So I came up with an amazing idea. Take one of my all time favorite breakfasts, put a twist on it and make it convenient to cook while away from a stove, oven or let’s just say it…. microwave!
So here is the thing, I am still following the 21 Day Fix meal plan, and I even intend to while I am camping. Although I won’t be bringing the containers, I know for the most part what I should be eating and how much. So these are also 21 day fix approved! YAY!!!
Now… here is what you will need.
- Tin foil
- Burrito Size Tortillas (can use gluten free or whole wheat) I was in a hurry and grabbed flour… shame shame I know
- Your choice of breakfast meat (I actually used Turkey Sausage, Baked Turkey Bacon, and Ham Steak so we have a variety)
- Carton of Egg whites
- Sweet Potatoes
- Bell Peppers
- Shredder Cheddar
- Coconut Oil
- Salt, Pepper, Garlic Powder to taste
- Side of Guac if you like
So what I do first is I cook all the meats, I bake the turkey bacon in the oven and while I am doing that I cut and cook the ham steak on a skillet. After the ham is done. I set aside and cut and cook sausage. When Bacon is cooked throughly, I cut it up. And place each in a bowl for later.
Next I cut up the sweet potatoes and bell peppers into bit size pieces, I cook over coconut oil until tender. This takes a while since both are a little thicker.
Then after cooked, I separate 3 ways, into each of the bowls.
Then I add 1/3 of the carton of egg whites, scramble and cook throughly. I sprinkle salt and pepper and some garlic powder and add a bowl with the meat and veggies mixture. I mix and add 1/2 cup of shredded cheddar and mix until melted.
Then I grab a tortilla (can warm before if you would like) scoop 1/4 of egg, meat and veggies mix onto tortilla, and fold like a burrito and wrap a square piece of tin foil around.
Repeat until all of your mixes are in a tortilla and wrapper in foil.
Make sure that if you are using different meats or ingredients that you label on the outside for later.
Let cool, store in a zip lock bag. And refrigerate. Place in cooler when you leave on your adventure.
When you are ready for you burritos, heat up your bbq or camping stove, place burritos with tin foil still on, over heat. Cook for rough 10-15 min each (I am winging this part since I officially leave for camping tomorrow so I may change this hehe)
Peal foil down while you eat, so it helps you hold it, maybe use a heating pad too hehe
